Millet and corn crackers are a gluten-free product, as when millet is hulled it is free from gluten and can therefore be enjoyed by coeliac disease sufferers. Our gluten-free crackers are suited not only to coeliac disease sufferers, but also to those who are slightly intolerant to this protein that is found in the majority of cereals used.

CORN: A FUNDAMENTAL INGREDIENT

Corn and millet crackers are a combination of cereals pressed at a controlled temperature of varying intensity in accordance with the type of cereal used and its water content, as well as with the addition of other cereals or spices used to add flavour to the recipe. During processing the kernels of corn are left intact, and are cooked exclusively via the evaporation of the water they contain, thus leaving all their nutritional properties intact. The result is a round crispy cracker with a weight of approximately 5-6 g. A quality corn and millet cracker should be dry, crumbly, light and with an uneven surface, which is the result of the natural expansion of the cereal.
