WHAT IS QUINÕA AND WHY DO WE USE IT FOR OUR CRACKERS?
This small seed from South America has for years been the main vegetable source of nutrition for the indigenous people of the Andes, long before becoming part of our diet.
The quinõa plant is similar to spinach and has rich foliage that can be used in many recipes. The most commonly used part is the seed, which is covered by a bitter protective layer that is removed during the cleaning process.
Properties:
The quinõa seed is considered a pseudocereal, due to its cereal-like characteristics, while the fact that it belongs to the Chenopodiaceae family sets it apart from grasses. Devoid of gluten, quinõa-based products are an excellent alternative for sufferers of coeliac disease.
Quinõa seeds offer countless benefits for the organism and are recommended for a healthy diet. They are rich in vitamins such as C and E. A diet characterised by the frequent consumption of quinõa seeds is particularly beneficial for the circulatory, intestinal and muscular systems thanks to the presence of mineral salts including magnesium.

HOW TO COOK QUINÕA: CRACKERS ARE AN EXCELLENT SOLUTION!
Cooking quinõa is quick and easy, another positive aspect of this small but precious seed.
Usually, all recipes with quinõa involve cooking the seeds for 15 minutes after having rinsed them properly. The mass of seeds, which will have softened and increased in volume, can then be used in a wide range of ways to create an infinite number of dishes. Bearing in mind that it is a valid alternative to rice, cous cous, spelt and amaranth, this "super food" can be used for example in a salad, with the addition of legumes. For those looking to create more particular and challenging recipes, quinõa can be combined with vegetables, cheese and other ingredients to make tasty rissoles.
