TASTE AND QUALITY: ROSEMARY CRACKERS

Our rosemary crackers are the result of a refined production process, in which prime ingredients play a leading role. We use our own organic corn and rosemary from mountain vegetable plots, passionately cultivated at an altitude of 1000 metres, to make these special crispy crackers. This aromatic herb, with its splendid flowers, is particularly suited to cooking, and its unmistakable aroma was an essential ingredient for our ancient corn crackers!

The touch of freshness provided by the addition of rosemary is a perfect companion to the decisive character of the corn, and renders the rosemary corn crackers the ideal accompaniment to goat and cow cheese spreads, as well as an original idea for a quick snack, ideal for keeping hunger at bay while enjoying the natural fragrances of the Seriana Valley.

The creation of rosemary crackers involves the cereal being pressed at a controlled temperature, which causes the water in the grains to evaporate, transforming them into a dry and crumbly cracker that is very light (5-6 grams per cracker). The studied production process allows for the organoleptic qualities and nutritional values of the raw ingredients to be conserved.

As quality is a characteristic of our company, we have chosen exclusively top-quality organic ingredients for our rosemary cracker recipe: corn from our own crops and rosemary from Gorno.

The tasty dish we would like to suggest is a rosemary risotto, a recipe with just a few, simple steps. After having gently fried the chopped onion and rosemary, add the rice and cook for 2 or 3 minutes, then pour in the red wine. Cook the rice, gradually adding vegetable broth, and season with salt. Once the rice is cooked, add the butter and leave to rest for a few minutes before serving with a sprinkling of grated parmesan cheese.
