Type-1 flour is a wholegrain, unrefined flour that is ideal for pizza, pasta and even cakes!

TYPE 1 FLOUR

Thanks to the stone-milling process, the entire wheat grain is processed, without any part being eliminated. Therefore, compared to the usual type-00 or 0 flours, type-1 flour has a higher concentration of bran and wheat germ, the part of the grain that is richest in nutritional substances.
The strength of type-1 flour, in other words its capacity to absorb liquids during dough making and to withhold carbon dioxide during raising, guarantees a strong and elastic dough. This is why it is suitable for highly leavened products such as bread, pizza, sponge cakes etc.
Strong type-1 flour is therefore characterised by an excellent balance between elasticity and suitability for bread making (aspects typical of more refined flours) and the nutritional qualities of wholegrain flour. It has a positive fibre content and also contains a higher percentage of vitamins and mineral salts than type-0 white flour.
